Greek Chicken Gyros with Homemade Tzatziki

1. Marinate the Chicken:
In a bowl, whisk together yogurt, olive oil, lemon juice, garlic, vinegar, oregano, cumin, salt, and pepper.

Add chicken and coat well. Cover and refrigerate for at least 1 hour (up to overnight for best flavor).

2. Make the Tzatziki:
Combine grated cucumber, yogurt, garlic, olive oil, lemon juice, and dill.

Mix well, season with salt to taste.

Chill in fridge for at least 20 minutes before serving.

3. Cook the Chicken:
Grill, pan-sear, or bake chicken until fully cooked and golden brown (internal temp 165Β°F / 74Β°C).

Rest for 5 minutes, then slice thinly.

4. Assemble the Gyros:
Warm pitas or flatbreads.

Spread tzatziki generously.

Add sliced chicken, tomatoes, onion, lettuce/cucumber, and feta if using.

Wrap or fold and enjoy!
