Easy Pudding Roll Recipe – The Easiest and Most Delicious Dessert

Quickly mix the ingredients by hand or with the kneading paddle of a food processor until you get a homogeneous, soft dough. It is important not to over-knead, just enough to hold it together.
Wrap the dough in cling film and refrigerate for at least 30 minutes, or up to 1-2 hours. (This dough can also be made the night before.)
Prepare the pudding filling:

Mix the pudding powder with the sugar and 100 ml of milk until smooth.
Bring the remaining 400 ml of milk to the boil in a saucepan.
When the milk is boiling, remove from the heat and pour in the pudding powder mixture, stirring constantly.
Return to the heat and cook, stirring constantly, until thick.
Remove from the heat and let cool to room temperature before using. Stir occasionally to prevent a skin from forming, or cover directly on top with cling film. The pudding should be cold but still spreadable before you pour it over the dough.
Assembling and baking the rolls:

Preheat the oven to 180°C (160°C fan-forced).
Line a baking tray with baking paper.
Remove the dough from the fridge and divide into two equal parts.
Roll out one piece of dough on a lightly floured surface into a rectangle, approx. 3 mm thick.
Spread half of the cold pudding evenly over the surface of the rolled out dough, leaving a small space at the edges.
Carefully roll up the dough starting from the longest side. Cut the roll into slices approx. 2-3 cm thick.
Place the slices on the baking tray lined with baking paper.
Repeat the process with the remaining dough and pudding.
Bake in the preheated oven for 20-25 minutes, or until the rolls are nicely golden brown.
Serving:

Remove from oven and let cool on the baking sheet.
Sprinkle with powdered sugar before serving.
Tips for the Perfect Pudding Roll:
Cold Dough: It is important that the dough stays cold, as this helps to achieve a crispy, crumbly texture. If the dough warms up while stretching, put it back in the fridge for a few minutes.
Quality of Cottage Cheese: Fattier, creamier cottage cheese will give a finer texture to the dough.
Pudding Flavoring: In addition to vanilla pudding, you can also use chocolate, punch, or even lemon pudding.
Extra Flavors: You can sprinkle a little grated lemon zest, raisins, or even ground nuts/poppy seeds on the pudding before rolling.
Storage: Pudding rolls will stay fresh in an airtight container in the fridge for 2-3 days.
