Cherry Cheese Coffee Cake

1. Preheat oven to 350°F (175°C).
Grease a 9x13-inch baking pan (or a 10-inch springform pan for a taller cake).

2. Make the Cake Batter:
In a large bowl, cream together the butter and sugar until fluffy.

Beat in the eggs one at a time, then add vanilla.

In a separate bowl, whisk flour, baking powder, baking soda, and salt.

Add dry ingredients to the wet mixture, alternating with sour cream and milk, beginning and ending with flour. Set aside.

3. Make the Cream Cheese Filling:
Beat cream cheese, sugar, egg, and vanilla until smooth.

4. Assemble the Cake:
Spread 2/3 of the cake batter into the pan.

Carefully spread the cream cheese filling over the batter.

Spoon cherry pie filling over the cream cheese layer.

Drop spoonfuls of the remaining batter on top.

5. Make the Crumb Topping (Optional):
Mix flour and brown sugar, then cut in butter with a fork until crumbly.

Sprinkle over the top of the cake.

6. Bake:
Bake for 45–55 minutes, or until a toothpick comes out clean (avoid testing in the cherry filling).

Cool completely before slicing.

Serve warm or at room temp.

Drizzle with a simple glaze (powdered sugar + milk) for extra sweetness.
