Cheese and Bread Puddings with Bacon and Herbs: A Tasty Anti-Waste Dish

Prep the Bread:
Cut or tear the stale bread into cubes (~1-inch). You can toast them briefly in the oven for extra texture if desired.

Cook the Bacon:
Fry the chopped bacon until crisp. Set aside on paper towels.

Mix the Custard:
In a large bowl, whisk together the eggs, milk, herbs, salt, pepper, and optional seasoning like mustard or nutmeg.

Assemble:
Grease a baking dish. Layer half of the bread, sprinkle with half the cheese and bacon. Repeat with remaining bread, cheese, and bacon.

Pour Custard:
Slowly pour the egg mixture over the bread. Press gently to ensure the bread soaks it up. Let sit for 10–15 minutes.

Bake:
Preheat oven to 180°C (350°F). Bake for 30–40 minutes, or until puffed and golden, and a knife inserted in the center comes out clean.

Serve:
Serve warm as a main with a salad, or as a side to roasted meats or vegetables.

♻️ Anti-Waste Tips:
Cheese ends? Grate and freeze them for dishes like this.

Milk about to expire? Perfect for savory puddings.

Day-old bread? Never toss it — cube and freeze it for recipes like this one.
