Ingredients
(Makes 12 canapés)
1. Base:
- 12 slices mini shokupan loaf(or brioche, lightly toasted)
- 1 ripe avocado (for mousse)
- 1 tbsp crème fraîche (or Greek yogurt)
- ½ tsp lemon juice
- Salt & white pepperto taste
2. Caprese Topping:
- 12 mini buffalo mozzarella balls
(ciliegine, sliced into 5mm discs)
- 12 ripe cherry tomatoes
(halved, seeds gently scooped out)
- 12 fresh basil leaves (micro basil for elegance)
3. Finishing Touches:
- Aged balsamic glaze (reduced to syrup)
- Extra-virgin olive oil (best quality)
- Edible pansies (or violas)
- Flaky sea salt (Maldon)
