Cajun Beans and Rice is an easy one-pot dish known for its incredibly delicious Cajun flavor.

SautΓ© the Veggies
Heat oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, and celery. Cook for 5–7 minutes, until soft and fragrant. Add garlic and cook 1 minute more.

Add Protein
Stir in sliced sausage (if using) and cook for 3–4 minutes, letting it brown slightly.

Spice it Up
Add all the Cajun spices and stir to coat the veggies and sausage.

Add Rice and Liquid
Stir in rice, beans, broth, and bay leaf. Bring to a boil, then reduce heat to low.

Simmer
Cover and simmer for 20–25 minutes, until the rice is tender and liquid is absorbed. Check occasionally and add a splash more broth or water if needed.

Finish and Serve
Remove bay leaf. Fluff rice with a fork and taste for seasoning. Add more salt, pepper, or hot sauce as desired.

Replace sausage with smoked tofu, tempeh, or vegan sausage.
