🥦 Broccoli Pesto – Recipe for a Creamy Winter Pesto
✅ Ingredients (for about 2–3 jars):
300 g broccoli (including the stems)
1 garlic clove
50 g grated Parmesan cheese (or nutritional yeast for the vegan version)
40 g nuts (e.g., almonds, walnuts, or cashews)
100 ml olive oil (more if desired)
1 organic lemon (juice & zest)
Salt & pepper
Optional: 1–2 tablespoons water or a little broth for extra creaminess
