Ingredients:
200g white chocolate
100g desiccated coconut
150g butter
120g sugar
3 eggs
80g flour
1 teaspoon vanilla extract
A pinch of salt
Additional desiccated coconut for decoration
Preparation:
Preheat the oven to 180°C (350°F).
Melt the white chocolate and butter in a bain-marie, stirring until smooth.
In a bowl, beat the eggs with the sugar until pale. Add the vanilla extract.
Gently stir in the flour and salt into the egg/sugar mixture.
Then add the melted white chocolate and butter mixture, mixing until smooth.
Fold in the desiccated coconut.
