1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the shredded chicken, queso cheese sauce, shredded cheddar cheese, and chopped green onions. Season with salt and pepper to taste.
3. Lay out the tortillas on a flat surface. Spoon the chicken and cheese mixture evenly down the center of each tortilla.
4. Roll up each tortilla tightly, tucking in the ends to secure the filling.
5. Place the rolls seam-side down on a baking sheet lined with parchment paper or lightly greased with olive oil.
6. Brush the tops of the rolls with a bit of olive oil to help them crisp up and turn golden brown.
7. Bake in the preheated oven for 20-25 minutes, or until the rolls are heated through and the tortillas are golden and crispy.
8. Let them cool slightly before serving.
Variations & Tips
For picky eaters, you can swap out the green onions with finely diced bell peppers or leave out the onions entirely.
