Roll out the pie crusts and cut them into circles large enough to fit into the cups of a muffin tin.
Press the dough circles into the muffin tin cups, ensuring they cover the bottom and sides.
In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain any excess fat.
Season the beef mixture with salt, pepper, garlic powder, and thyme. Stir to combine.
In a mixing bowl, whisk together the eggs and milk until well combined.
Divide the beef mixture evenly among the prepared muffin cups.
Sprinkle shredded cheddar cheese over the beef in each muffin cup.
Pour the egg mixture over the beef and cheese, filling each cup almost to the top.
Bake in the preheated oven for 20-25 minutes, or until the quiches are set and the tops are golden brown.
Allow the quiches to cool slightly before removing them from the tin. Serve warm.
