1. Make the Cheesecake Filling:
In a bowl, beat cream cheese until smooth.
Add powdered sugar and vanilla extract. Mix until creamy.
Fold in the chopped strawberries. Set aside.
2. Prep the French Toast:
In a shallow bowl, whisk together eggs, milk, vanilla, and cinnamon.
Spread the cheesecake mixture onto 4 slices of bread, then top with remaining slices to make sandwiches.
3. Cook the French Toast:
Heat a skillet or griddle over medium heat and melt a little butter.
Dip each stuffed sandwich into the egg mixture, coating both sides.
Cook each sandwich for 3β4 minutes per side, until golden brown and cooked through.
4. Serve:
Slice in half and stack if desired.
Top with fresh strawberries, a dusting of powdered sugar, a drizzle of syrup, and whipped cream.
π Tips:
Use slightly stale bread to prevent sogginess.
You can make the filling ahead of time and chill it for a thicker consistency.
Want extra decadence? Add a little lemon zest to the cream cheese for brightness.
