Preparation:
Prepare the spinach filling: Wash and chop the spinach. Finely dice the onions and fry in a pan with oil until golden brown. Add the tomato paste and fry briefly. Then add the spinach, season, and cook until the liquid has evaporated. Let cool.
Dough mix: Mix the milk, yogurt, eggs, oil, and baking powder well in a bowl.
Prepare the yufka: Place a yufka on baking paper and spread with the sauce. Divide into four pieces, adding a little spinach filling to each quarter.
Shape: Roll the filled yufka pieces into a rose shape.
Bake: Pour the remaining sauce onto the formed böreks and bake in a preheated oven at 200°C for about 30–40 minutes, until golden brown.
