Prepare the dough: Mix Skyr, eggs, milk, flour, baking powder, and salt in a large bowl with a hand mixer or whisk until smooth. The dough will remain quite firm but is easy to shape.
Scoop out the rolls: Using two tablespoons, scoop out about nine equal-sized pieces of dough and place them on a baking sheet lined with parchment paper, leaving enough space between them.
Distribute the toppings: Sprinkle sesame seeds, poppy seeds, or your favorite seed mix on the dough pieces to taste – this adds extra flavor and ensures a crispy crust.
