2 tbsp vegetable oil (or sesame oil for flavor)
2 eggs, beaten
1/2 cup chopped onion
1 clove garlic, minced
1/2 cup mixed vegetables (like peas, carrots, corn – fresh or frozen)
2–3 tbsp soy sauce (adjust to taste)
1 tsp oyster sauce or hoisin (optional, for depth)
Salt and pepper, to taste
