🦐 Shrimp Curry with Coconut Milk and Spinach
Ingredients:
1 lb (450g) shrimp, peeled and deveined

1 tbsp oil (coconut oil or vegetable oil)

1 small onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tbsp curry powder (or to taste)

1/2 tsp ground turmeric (optional, for color and depth)

1/4 tsp red pepper flakes (optional, for heat)

1 can (13.5 oz) coconut milk (full-fat for richness)

4 cups fresh spinach (or about 2 cups frozen, thawed and squeezed)

Salt and pepper, to taste

Juice of 1/2 lime (optional, for brightness)

Fresh cilantro, chopped, for garnish

Cooked rice or naan, to serve
