Olivier Salad: A Traditional, Delicious, and Creamy Russian Potato Salad Recipe

What is Olivier Salad?

Olivier salad (pronounced ou-li-vi-ay sa-louhd) is a classic Russian recipe for delicious and creamy potato salad. It is best known as Russian salad or ovye in the Ukrainian community.

Boiled potatoes, eggs, peas, carrots, onions, cucumbers, and meat are mixed with a creamy mayonnaise.

When to Serve Russian Potato Salad?

Olivier salad is a popular recipe for winter celebrations like Christmas and New Year's. You can also serve it for other special occasions or holidays like Easter.

Tips for a successful Olivier salad:

If you have the time, you can make your own mayonnaise or use store-bought mayonnaise.

The vegetables should be cut into even slices and slightly crispy on the outside, but not soggy. If using cucumbers, drain them before mixing.

Choose fresh or frozen peas: avoid canned peas, as they contain a lot of water and are too soft.

To keep the vegetables firm and colorful, once cooked, immerse them in a bowl of ice water for a few seconds, then let them dry on a clean cotton towel.

For a vegan Olivier salad, omit the eggs and tuna. Don't forget the mayonnaise, the main ingredient in this recipe; replace it with soy or vegan mayonnaise. For more texture, you can add cooked cauliflower.

For a vegetarian Russian salad, omit the meat.
