🍖✨ Meat Roll Stuffed with Spinach and Mushrooms

For the Meat Roll:
700g (1.5 lbs) ground beef or veal (or a mix of beef + pork)
1 egg
1/4 cup breadcrumbs
1/4 cup grated Parmesan
2 garlic cloves, minced
1 tsp dried thyme or rosemary
Salt & pepper to taste
For the Filling:
1 tbsp olive oil
1 shallot or small onion, finely chopped
200g (7 oz) fresh mushrooms (cremini, button, or wild), chopped
2 cups fresh spinach, chopped
1 tbsp fresh parsley or sage, chopped
Salt & pepper
Optional: 1/2 cup shredded cheese (mozzarella, fontina, or gouda)
Optional Glaze (for color and flavor):
1 tbsp Dijon mustard
1 tbsp olive oil or butter
1 tsp honey
