1. Wash the vegetables thoroughly and cut into small pieces.
2. Heat a little olive oil in a large pan and sauté the prepared vegetables over medium heat until nice and soft.
3. While the vegetables are roasting, add a little olive oil to a second pan, crack the eggs, and fry them as fried eggs – however you like them.
4. Season the roasted vegetables with salt, pepper, and fresh herbs to taste.
5. Now simply place the fried eggs on top of the vegetables, arrange everything lovingly, and enjoy immediately.
