Preheat the oven to 150°C. Slow, even baking is important!
Line a 20-22 cm diameter, high-walled cake tin with baking paper (both the bottom and sides). Do not butter or flour it, as the dough will climb the tin and if it is too slippery, it may collapse.
Preparing the yellow mixture:
In a large bowl, beat the egg yolks with half the sugar (50 g) until smooth.
Add the milk, oil and vanilla extract, then mix.
Sieve the flour and cornstarch into the egg yolk mixture and mix until there are no lumps. You will get a thick, smooth batter. Set aside.
To make the egg white foam:
In another clean, completely fat-free bowl, beat the egg whites with the lemon juice/vinegar and a pinch of salt.
When the foam starts to whiten and holds its shape easily, gradually add the remaining sugar (50g) in several batches.
Continue beating until it forms glossy, stiff peaks (do not overbeat, as it will be dry).
To assemble the batter:
Carefully fold the stiff egg white foam into the yolk mixture in three batches. Do this with a spatula, using slow, bottom-up movements so that the foam does not break and the batter retains its airy texture. Do not overmix, just enough to come together.
To bake:
Pour the cloud dough mixture into the prepared cake tin.
Gently tap the tin on the table a few times to release any air bubbles.
Place in the preheated oven and bake for 50-60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Important: Do not open the oven door during baking, otherwise the cake may collapse!
Cooling:
When the cake is ready, remove it from the oven.
Turn it upside down (on the base if the pan has legs, or on the neck of a bottle if it doesn’t) and let it cool completely before removing it from the pan. This will help prevent it from collapsing.
Serving:
Carefully cut around the edges of the cake with a thin knife and remove it from the pan.
Sprinkle with powdered sugar or serve with fresh berries and a little whipped cream.
