1. Prep the Gooseberries:
Wash and roughly chop the gooseberries, removing any seeds.

2. Make the Mojito Base:
In a mortar & pestle or small blender, crush/blend the gooseberries with sugar, mint leaves, lime juice, and a pinch of salt until it becomes a pulpy, fragrant mixture.

3. Strain (Optional):
If you prefer a smoother drink, strain the pulp through a fine sieve to remove solids. Otherwise, leave it rustic!

4. Assemble:
Divide the pulp into two glasses.

Add rum if using.

Fill with crushed ice.

Top up with chilled soda or sparkling water.

Stir gently to mix.

5. Garnish & Serve:
Garnish with a lime wedge, a sprig of mint, and a sliced gooseberry on the rim or in the drink.

Add a few slices of cucumber for a cooling effect.

Make a mocktail version by skipping the rum and adding a splash of ginger ale for extra zing.

You can make a large batch of the gooseberry-mint base and store it in the fridge for up to 3 days.
