🍕 Pizza di Scarola (Neapolitan Escarole Pizza)
🇮🇹 Traditional, Rustic, and Utterly Delicious
🧂 Ingredients
For the Dough (you can also use pizza dough or shortcrust for a shortcut):
500g (about 4 cups) all-purpose flour
7g (1 packet) active dry yeast or 15g fresh yeast
1 tsp sugar
300ml warm water
2 tbsp extra virgin olive oil
1 tsp salt
For the Filling:
2 large heads escarole, cleaned and chopped
3 tbsp olive oil
3–4 anchovy fillets (optional but traditional)
2 cloves garlic, minced
3 tbsp black or Gaeta olives, pitted and chopped
2 tbsp capers, rinsed
A handful of raisins (optional – for a sweet contrast)
A handful of pine nuts (optional)
Salt and pepper, to taste
Red chili flakes (optional)
