Eggplant Cannoli: This is sure to become a family favorite.

Slice the eggplant into 0.5cm rounds.
Heat a skillet or electric grill over medium heat and cook the eggplant slices for 3 to 5 minutes on each side. Season with salt and a little olive oil.
In a bowl, beat 2 eggs.
Dip each eggplant round in the eggs, then coat with breadcrumbs.
Stuff each slice with cheese and a piece of cooked ham.
Secure with a toothpick and place on a baking sheet lined with parchment paper. Drizzle with a little olive oil and bake in a preheated 200°C/400°F fan oven for 5 to 7 minutes, or until the cheese melts. Serve and enjoy!
