Heat cream: In a medium saucepan, gently heat the heavy cream (and sugar if using) over medium-low heat until it just begins to simmer around the edges. Do not let it boil. You can also do this in a microwave-safe bowl, heating in 30-second intervals until hot.
Melt chocolate: Place the chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate. Let it sit for 2-3 minutes without stirring.
Mix ganache: After 2-3 minutes, gently whisk or stir the mixture from the center outwards until the chocolate is completely melted and you have a smooth, glossy ganache. Stir in the vanilla extract if using.
Step 3: Assemble the Cake
Pour filling: Retrieve the prepared base from the refrigerator. Pour the chocolate ganache filling evenly over the biscuit base.
Smooth top: Gently tap the pan on the counter a few times to remove any air bubbles and ensure a smooth top surface.
Step 4: Chill and Serve
Chill: Place the cake in the refrigerator for at least 4-6 hours, or preferably overnight, until the chocolate ganache is completely set and firm.
Serve: Once set, remove the cake from the refrigerator. If using a springform pan, simply release the sides. If using a regular pan, carefully lift the cake out using the parchment paper overhang.
Garnish: Garnish with chocolate shavings, a dusting of cocoa powder, fresh berries, or a dollop of whipped cream just before serving.
