1. Make the Dough (Skip if using store-bought)
In a bowl, mix warm water and sugar. Sprinkle yeast on top and let sit 5–10 min until foamy.
Add olive oil, salt, and flour gradually. Knead until smooth (5–7 min).
Cover and let rise in a warm place for 1 hour, or until doubled.
2. Preheat Oven
Preheat your oven to 425°F (220°C). Place a pizza stone or baking sheet inside to heat.
3. Assemble the Calzone
Roll out dough into a large oval or circle (~10–12 inches).
On one half of the dough, layer:
A spoonful of marinara
Chicken pieces
Mozzarella and Parmesan
Sprinkle of Italian seasoning
Fold the dough over and crimp the edges to seal. Cut a couple of steam slits on top.
4. Bake
Transfer to hot baking sheet or pizza stone.
Brush with olive oil or butter, sprinkle with garlic powder and a bit of Parmesan.
Bake 15–20 minutes or until golden brown and crispy.
5. Serve
Let rest a few minutes before slicing.
Serve with warm marinara on the side for dipping.

For extra crispiness, use an egg wash instead of oil before baking.
Add sautéed onions or bell peppers for more flavor.
