Preheat oven to 400 °F (200 °C). Line baking sheet.
Place potato halves cut‑side down; bake 30–35 min until tender.
Meanwhile, cook beef in skillet until browned; add taco seasoning per packet, ¼ cup water—cook until thick.
When potatoes are done, flip cut‑side up and make slight mash in center of each.
Spoon beef mixture onto each potato; top with cheddar.
Bake 5 more minutes until cheese melts.
Top with sour cream and green onions before serving.
