1. Crust Preparation:
1. Mix crushed Oreo cookies and melted butter together. Press this mixture into the bottom and up the sides of an 8” x 5” pie pan.
2. Refrigerate while you prepare the filling.
2. Preparing the cheesecake filling:
1. Preheat the oven to 160°C (325°F).
2. In a large bowl, beat the cream cheese and sugar until well combined.
3. Add the melted white chocolate and mix well.
4. Stir in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
5. Add the sour cream and mix until well combined.
6. Pour the filling over the prepared crust.
7. Bake for 45-50 minutes or until the center is almost set.
8. Let cool in the pan, then refrigerate for at least 4 hours or overnight.
3. Preparing the milk chocolate topping:
1. Heat the heavy cream in a small saucepan or in the microwave until warm, but not boiling.
2. Pour the hot cream over the milk chocolate in a bowl and let sit for 1-2 minutes.
3. Stir until the chocolate is completely melted and the mixture is smooth.
4. Let cool for a few minutes and then pour over the cooled cheesecake.
4. Refrigerate for at least 1 hour before serving.
