Brazilian roast pastel with cheese and Calabresa sausage recipe

The Brazilian Pastell or Pastel, a popular Street Food and Snack made of extremely thin, crispy dough, which is filled and fried in oil. This version is made with cheese and spicy Calabresa sausage – a real flavor explosion that brings the atmosphere of Brazil to your home! Perfect a welcome wall or even a light lunch.

Ingredients:
To the dough (Pastel de Feira pasta):

2 and 1/2 cups (about 300 g) Universal flour
1 teaspoon of salt
1 tablespoon of vegetable oil
1 tablespoon of Cachaca (Brazil Rum) or vodka (this makes the dough extra crisp, if not, can be omitted)
About 1/2 cups (120 ml) lukewarm water (you may need more or less)
To the filling (Queijo e Calabresa):

200 g Calabresa sausage (if not, you can use high quality spicy thick sausage but Calabresa gives the authentic taste)
1 tablespoon of vegetable oil (for baking sausage)
1/2 head medium onion, chopped
200 g grated cheese (eg semi -hard cheese like mozzarella, cheddar, or Brazil Minas cheese)
Optional: 1-2 tablespoons fresh chopped parsley
For baking:

Plenty of vegetable oil for baking (sunflower oil, rapeseed oil)
Facilities required:
Big mixer
Rolling pin
Large pan or saucepan for baking
Plate lined with a paper towel for the plated pastels
Optional: Pastell shape or pizza cutter to seal the edges
