Preheat your oven to 350°F (175°C).
In a large bowl, combine the cherries, granulated sugar, cornstarch, and vanilla extract. Mix well and set aside.
In another bowl, mix together the flour, shredded coconut, brown sugar, melted butter, and salt until the mixture resembles coarse crumbs.
Pour the cherry mixture into a 9x9-inch baking dish, spreading it evenly.
Sprinkle the coconut crumble mixture over the cherries, covering them completely.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the cherries are bubbly.
Let the crumble cool for a few minutes before serving.
Variations & Tips
For a nutty twist, add 1/2 cup of chopped almonds or pecans to the crumble topping. If you prefer a less sweet dessert, reduce the sugar in the cherry mixture to 1/3 cup. For a gluten-free version, substitute the all-purpose flour with almond flour or a gluten-free flour blend. You can also experiment with different fruits, such as blueberries or raspberries, for a different flavor profile.
