Ingredients (Serves 4):
For the onions:
2 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
1/4 tsp sugar (helps with caramelizing)
1/2 tsp salt
1/4 cup beef broth
1 tbsp balsamic vinegar or dry sherry (optional, for depth)
For the burgers:
1.5 lbs (680g) ground beef (80/20 is ideal)
Salt & black pepper
1 tsp Worcestershire sauce
4 slices Gruyère or Swiss cheese
4 brioche buns (or sturdy bakery rolls)
Optional: Garlic aioli or dijon mustard
Optional toppings:
Fresh thyme leaves
Arugula or baby greens
Crispy fried onions (for extra crunch)
