Prepare the crumb base: Melt the butter or margarine in a saucepan and remove from the heat. Crumble the speculatius biscuits into a freezer bag using a rolling pin. Mix the crumbs with the melted butter. Pour about 3/4 of the mixture into 4 dessert glasses (approx. 250 ml each) and press down lightly.
Prepare the cream: Wash and hull the strawberries. Cut half into small pieces. Roughly chop the other half and puree with a hand blender. Add the milk, quark, and quark flour to the strawberry puree and mix until smooth.
Layer and decorate: Fill the glasses with the quark cream, alternating with the strawberry pieces. Sprinkle with the remaining cookie crumbles and refrigerate until ready to serve.
