Zucchini burgers: healthy, light, and full of flavor!

Instructions:

Prepare the zucchini: Coarsely grate the zucchini using a grater or food processor. Place the grated zucchini in a clean dish towel or colander and squeeze out any excess moisture. This is important, otherwise your zucchini burgers will be too mushy and fall apart.

Combine the ingredients: Place the drained zucchini in a bowl and add the egg, breadcrumbs, grated cheese, garlic, onion, olive oil, oregano, salt, and pepper. Mix well. If the mixture is too wet, add more breadcrumbs until it's firm enough to form.

Form the burgers: Divide the mixture into portions and form about 6-8 burgers with your hands, depending on the desired size.

Bake: Heat a little olive oil in a large skillet over medium heat. Cook the zucchini burgers for 3-4 minutes on each side until golden brown and crispy. Make sure to turn them carefully to prevent them from falling apart.

Serve: Serve the zucchini burgers on a bun with your favorite toppings like lettuce, tomatoes, avocado, and a delicious sauce. They also make a great side dish with salad or grilled vegetables.
