Bring the water and cinnamon stick to a boil in a saucepan. Once boiling, add a pinch of salt.

While the water is boiling, add the pineapple and sugar and reduce the heat to a gentle simmer.

Let it simmer for 30 to 40 minutes, stirring occasionally to prevent burning.

Once the heat is off, grind the pineapple until you reach the desired consistency.

Serve in a bowl and let cool.

The excess water can be stored in pre-sterilized glass jars (boiled in water with the lid on for 15 minutes). To do this, it is recommended to make it warm, close it carefully and let it cool upside down so that a vacuum is created.
