2. Heat 2.5 liters of salted water. Add the spaghetti, stirring constantly, until completely submerged in the water.
Reduce the heat and cook for 5 to 7 minutes at a medium boil (be careful, cooking starchy foods can easily boil over).
3. Meanwhile, heat your pan and sauté the guanciale or bacon, first quickly, then reduce the heat while you drain the spaghetti.
4. Once drained, pour the spaghetti into a shallow dish and add the olive oil. Mix and add the sautéed guanciale or bacon (without the fat), reserving some for presentation.
5. Place the spaghetti on a (warm) plate. Add the grated Parmesan cheese. Sprinkle with chopped basil or arugula, add an egg yolk to the pasta on each plate, and season with black pepper before serving.
Tips and Advice
We don't add salt. The bacon and Parmesan cheese do the job.
