Instructions

Roast Carrots

Preheat oven to 425Β°F (220Β°C).

Toss carrots with olive oil, salt, pepper, and smoked paprika.

Spread carrots on a baking sheet, cut side down.

Roast for 25–30 minutes, flipping halfway through.

Make Whipped Ricotta

Blend ricotta, milk (or cream), olive oil, and lemon zest until smooth and fluffy.

Season with salt and pepper to taste. Chill until ready to use.

Prepare Hot Honey

Warm honey over low heat.
