Preheat your oven to 375°F (190°C).
Steam the broccoli florets for about 5 minutes, until they are bright green and just tender. Drain and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, creating a roux.
Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-4 minutes.
Remove the saucepan from heat and stir in 1 cup of the shredded cheddar cheese until melted and smooth. Season with salt and pepper.
Place the steamed broccoli in a baking dish and pour the cheese sauce over the top, ensuring all the florets are well-coated.
In a small bowl, combine the breadcrumbs with the remaining 1/2 cup of cheddar cheese and olive oil. Sprinkle this mixture evenly over the broccoli.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
Allow the dish to cool for a few minutes before serving.
Variations & Tips
For a bit of spice, add a pinch of cayenne pepper to the cheese sauce. You can also mix in some cooked, crumbled bacon for an extra layer of flavor. If you prefer a different cheese, try using Gruyère or Monterey Jack for a unique twist. For a gluten-free version, substitute the flour with cornstarch and use gluten-free breadcrumbs.
