Peri-Peri Chicken Drumsticks & Chipotle Sauce

1️⃣ Drumstick Marinade
In a bowl, combine the Peri-Peri sauce, paprika, cayenne pepper, garlic powder, oregano, salt, and pepper.
Add the olive oil, lemon juice, and honey. Mix well.
Coat the drumsticks in this marinade and let sit for at least 2 hours (ideally overnight in the refrigerator). 2️⃣ Cooking the drumsticks
On the barbecue: Cook them over medium heat for 25 to 30 minutes, turning them often and brushing them with the marinade.
In the oven: Preheat to 200Β°C (fan-assisted), place the drumsticks on a rack and cook them for 35 to 40 minutes, turning them halfway through cooking. Finish under the grill for 5 minutes for a nice caramelization.
3️⃣ Preparing the chipotle-mayo sauce
In a bowl, mix the mayonnaise, chipotle sauce, mustard, lemon juice, and salt.
Add a pinch of sugar if the sauce is too spicy.
Refrigerate until ready to serve.
