Preheat your oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom and up the sides of a rectangular tart pan to form the crust.
Bake the crust in the preheated oven for 10 minutes, or until golden brown. Remove from the oven and let it cool completely.
In a large mixing bowl, whip the heavy cream with an electric mixer on medium speed until it begins to thicken.
Add the powdered sugar and vanilla extract to the cream, and continue to whip until soft peaks form.
Spread the whipped cream evenly over the cooled crust, creating peaks and swirls with a spatula.
Arrange the cherries on top of the whipped cream, pressing them gently into the cream to secure them.
Refrigerate the tart for at least 1 hour before serving to allow the flavors to meld.
Variations & Tips
For a different twist, try adding a layer of chocolate ganache between the crust and the whipped cream. You can also use a mix of berries, such as raspberries and blueberries, for a more colorful presentation. If fresh cherries are not available, canned or jarred cherries can be used, but be sure to drain them well. For a more indulgent flavor, consider adding a splash of almond extract to the whipped cream.
