Instructions:
Preheat oven and prepare pan: Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
Cream sugars and butter: In a large bowl, mix the room temperature butter, brown sugar, and granulated sugar together until the mixture is light and smooth.
Add wet ingredients: Mix in the eggs one at a time, followed by the vanilla extract and the instant pistachio pudding mix. Beat until well combined.
Combine dry ingredients: In a separate small bowl, sift together the flour, baking soda, and salt.
Combine wet and dry: Slowly add the sifted dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
Fold in nuts and chips: Gently fold in the roughly chopped unsalted pistachios and the white chocolate chips until they are evenly distributed throughout the batter.
Bake: Transfer the batter to the prepared 8×8-inch baking dish and spread it evenly. Bake in the preheated oven for 25-28 minutes, or until the blondies are cooked through the center. A toothpick inserted into the center should come out with moist crumbs attached.
Cool and cut: Allow the pistachio blondies to cool in the baking dish for at least 30 minutes before cutting them into squares or bars. Enjoy this uniquely flavored and chewy treat!
