Mumbai Grilled Sandwich

Step 1. Make the Mint Chutney:
β€’ In a blender, combine the mint leaves, green chilies, garlic, ginger, lemon juice, a pinch of salt, and water.
β€’ Blend until smooth, scraping down the sides if necessary. Add a little water if the consistency is too thick.

Step 2. Make the Bread:
β€’ Butter one side of each slice of bread (for grilling).
β€’ Flip and spread the mint chutney generously on the other side of each slice.

Step 3. Sandwich Assembly:
β€’ On a slice of bread, chutney side up, layer the cucumber, tomato, and onion slices.
β€’ Sprinkle the spice mix evenly over the vegetables.
β€’ Add a layer of grated cheese over the vegetables.
β€’ Top with another slice of bread, chutney side down.

Step 4. Grill the Sandwich:
β€’ Heat a skillet or grill over medium heat. β€’ Place the sandwich, buttered side down, in the skillet.
β€’ Press lightly and grill until golden brown and crispy, about 2 to 3 minutes per side.
β€’ Carefully flip and grill the other side.

Step 5. Serve:
β€’ Cut in half and enjoy warm with a little mint chutney or ketchup.
