1. Preheat the oven to 180°C (top and bottom heat).
2. In a bowl, thoroughly mix the low-fat quark, grated cheese, Parmesan, and eggs.
3. Season the mixture with oregano, salt, and pepper and stir well.
4. Line a baking sheet with parchment paper and form the dough into two flat patties.
5. Bake the dough in the preheated oven for 15 minutes.
6. Remove the pre-baked flatbreads and spread them with crème fraîche. Then top them evenly with bacon cubes, spring onion rings, and the remaining grated cheese.
7. Return the baking sheet to the oven and bake the flatbreads for another 15 minutes, until the topping is golden brown and the cheese has melted.
