1. In a large bowl, mix the flour, yeast, sugar, and salt.
2. Add warm water and olive oil to the dry ingredients and mix until a dough forms.
3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
5. Preheat your oven to 375°F (190°C).
6. In a separate bowl, combine the mozzarella, feta, bell peppers, spinach, onions, oregano, and garlic powder.
7. Punch down the risen dough and divide it into 8 equal pieces.
8. Roll each piece into a circle, place a generous spoonful of the vegetable and cheese mixture in the center, and fold the edges over to seal.
9. Place the rolls seam-side down on a baking sheet lined with parchment paper.
10. Beat the egg and brush it over the tops of the rolls. Sprinkle with sesame seeds or dried herbs.
11. Bake for 20-25 minutes or until the rolls are golden brown.
12. Allow to cool slightly before serving.
Variations & Tips
For a spicier kick, add some chopped jalapeños or a pinch of red pepper flakes to the filling. You can also experiment with different cheeses like cheddar or gouda for a unique flavor profile. If you prefer a meatier option, add some cooked and crumbled sausage or bacon to the filling.
