Herb-Infused Baked Zucchini Fries with Almond Flour

Preheat the oven to 400°F (200°C).
Slice the zucchinis into fry-shaped pieces, about 1/4 inch thick.
In a shallow bowl, beat the eggs lightly.
In a separate bowl, mix together Parmesan cheese, almond flour, garlic powder, Italian seasoning, and black pepper.
Dip each zucchini strip into the beaten eggs, then coat it with the Parmesan and almond flour mixture.
Arrange the coated zucchini fries on a greased baking sheet.
Bake for 10 minutes, then flip the fries and bake for another 10 minutes, until golden and crispy.
Serve immediately with your favorite dipping sauce.
