Prepare the bananas:
Peel the bananas.
Cut them in half if they are too long, otherwise leave them whole.
Caramelize the sugar:
In a large skillet, heat the butter or oil over medium heat.
Add the sugar. Let it partially melt; it should start to stick to the bananas.
Cook the bananas:
Add the bananas and fry them gently in the melted sugar.
Turn them over regularly so they are golden brown and caramelized on all sides. Remove them when they are golden brown.
Coat in sugar:
Roll the still-warm bananas in granulated sugar.
Serve:
Place the bananas on skewers (as shown).
Serve warm or at room temperature.
