Ingredients:
3–4 lb (1.4–1.8 kg) beef roast (top sirloin, ribeye, or chuck)
4–5 cloves garlic, thinly sliced
2 tablespoons olive oil
1 tablespoon coarse sea salt
1 teaspoon freshly ground black pepper
1 tablespoon fresh rosemary (or 1 tsp dried)
1 tablespoon fresh thyme (or 1 tsp dried)
Optional: 1 onion, quartered
Optional: 1 cup beef broth or red wine (for the pan)
