Tigelle (Crescentine)

This recipe is enough for about 15-20 small loaves.

Ingredients:

500 g fine flour (00 flour is ideal, but plain wheat flour will do)
1 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons lard (or olive oil for a lighter version)
Approx. 250-300 ml lukewarm milk (or water for vegan version)
Preparation:

Mixing the dry ingredients: In a large bowl, mix the flour, salt and baking soda.
Adding the fat: Add the lard (or olive oil) to the flour mixture and rub it in with your fingers until you get a smooth, crumbly texture.
Assembling the dough: Slowly add the lukewarm milk (or water) a little at a time, while stirring constantly. Knead the dough until it comes together into a smooth, elastic dough. You may not need all the liquid.
