These delicious peach puff pastry pockets are perfect for a sweet treat. With a creamy filling and a peach slice, wrapped in flaky puff pastry, they're sure to impress. Here's how to make them:

Ingredients:
1 egg
3 tablespoons of sugar
2 tablespoons of cornstarch
8 grams of vanilla sugar
300 ml of milk
1 teaspoon of butter
Puff pastry sheets
Peaches in syrup

Instructions:

Preheat oven:
Preheat oven to the temperature indicated on the puff pastry package.
Prepare the creamy filling:
In a saucepan, whisk together the egg, sugar, cornstarch, and vanilla sugar.
Gradually add the milk, whisking continuously to avoid lumps.
Place the saucepan over medium heat and cook the mixture, stirring constantly, until thickened. Remove the pan from the heat and stir in the butter until melted.
Prepare the puff pastry:
Roll out the puff pastry sheets and cut them into squares.
Place a spoonful of the milk mixture on each puff pastry square.
Top the milk mixture with a peach slice from the syrup.
Assemble the pockets:
Fold the corners of the puff pastry squares over the peaches to create a pocket.
Place the pastries on a baking sheet lined with parchment paper.
Bake:
Bake in a preheated oven for about 15 to 20 minutes, or until the pastries are golden brown.
