In the same pan, cook eggs as desired—scrambled, sunny-side-up, or an omelet style with the veggies mixed in.
Assemble the Toast:
Place the toast on a plate. Layer with sautéed veggies, then add the eggs on top. Sprinkle with shredded cheese while hot so it melts slightly.
Finish and Serve:
Garnish with herbs or chili flakes. Add avocado slices or a drizzle of hot sauce if you like a kick. Serve warm!
