πŸ‘©β€πŸ³ How to make it?
1. Cook the broccoli and potatoes
Boil the potatoes in a little salted water for about 10-15 minutes, until tender.

Steam or boil the broccoli in a separate pot for about 5-7 minutes, until the florets are tender but still have some bite.

2. Mash the ingredients
Mash the cooked potatoes and broccoli in a bowl. You can do this with a fork or a potato masher. It doesn't have to be completely smooth; it can have some texture.

3. Make the mixture
Add the egg, grated cheese (optional), garlic, thyme or oregano, and some salt and pepper to the broccoli and potato mixture. Mix everything well until a firm mixture forms. If it's too wet, you can add some more breadcrumbs.

4. Form the croquettes
Take some of the mixture and roll it into a croquette shape (about the size of a walnut). Then coat the croquettes in some breadcrumbs to give them a nice, crispy coating.

5. Bake
Heat some olive oil in a pan over medium heat. Fry the broccoli croquettes in the oil, turning frequently, until golden brown and crispy, about 5–7 minutes per side.

After frying, place the croquettes on paper towels to remove any excess fat.

6. Serve
Serve the broccoli croquettes immediately, perhaps with a fresh yogurt or garlic dip for extra flavor!

✨ Variations and Tips:
Cheese version: For an extra creamy and delicious croquette, add some mozzarella or cheddar cheese to the mix.

Spicy version: For a little more spice, add some chili flakes or paprika powder to the mix.

Vegan: Use plant-based cheese and replace the egg with a flaxseed mixture (1 tablespoon of ground flaxseed with 3 tablespoons of water, let stand for 5 minutes) to make a vegan version.

Oven bake: Want to make it even healthier? Place the croquettes on a baking sheet and bake in the oven at 200Β°C for about 20-25 minutes, turning halfway through. This will reduce the fat content while still being nice and crispy!

πŸŽ‰ Serving:
Serve the broccoli croquettes with a fresh salad, some yogurt, or a spicy salsa as a dip and enjoy this nutritious treat! They're perfect for a healthy snack, as a side dish to a meal, or even as a light lunch.
