Cook the Chicken
In a large skillet over medium-high heat, heat olive oil. Add the thinly sliced chicken and season with garlic powder, salt, and pepper. Cook until the chicken is no longer pink, about 6–8 minutes.
Sauté the Veggies
Add sliced onions and peppers to the skillet with the chicken. Cook until veggies are soft and lightly caramelized, about 5–7 minutes.
Melt the Cheese
Lower the heat, lay provolone slices over the chicken and veggie mixture. Cover the pan for 1–2 minutes until the cheese is melted.
Assemble the Sandwiches
Toast hoagie rolls (optional), then fill them with the cheesy chicken and veggie mixture.
Serve & Enjoy!
Serve hot with fries, chips, or a crisp salad on the side.
