Mint leaves and lemon slices, to decorate
1 commercially purchased lemon pie or quarter cake recipe
1 homemade or commercial Lemon Curd recipePreparation of the lemon cake:
Prepare a batch of lemon cake using a 9 13-inch or 13 18-inch pan. Adjust the cooking time accordingly.
Allow the cake to cool completely. Dice.
The cake can be made in advance and refrigerated.
2️⃣ Lemon Curd:
Prepare a batch of homemade Lemon Curd. Leave to cool before using.
3️⃣ Preparation of the filling:
Place the softened cream cheese in a large bowl. Add vanilla extract, limoncello and lemon zest. Beat until mixture is smooth.
Add 1/2 cup Lemon Curd and icing sugar. Mix until you obtain a homogeneous mixture.
Gradually add the cooled heavy cream, whisking to achieve consistent peaks.
4️⃣ Assemble the dessert:
Fill the bowl with the pieces of cake cut into cubes, squeezing them slightly.
Lightly brush the cake pieces with limoncello.
Add the blueberry jam, lemon curd and blueberries.
Spread the lemon cheesecake filling evenly.
Repeat layers, garnish with blueberries, mint leaves and lemon slices.
Serve immediately or refrigerate overnight for best results.
